deleting AIR/EGR

I'm going to go with what some guys on this forum have said and get my car tuned. I'm going with Madz28, and when i was reading on their site, it said how i can have them delete the AIR/EGR crap...but i can still keep it all hooked up. Well if i want to take all of the AIR and EGR stuff off, what kind of job would it be???????? Right now they are all hooked up to my longtube headers....
