the iat is only responsible for reading intake air temperature and controls the rate of timing advance. You might have a vacuum leak, fouled injector, bad plug wire, stuck egr or a host of other problems.

The IAC located at the throttle body is responsible for metering in additional air when the throttle blades are closed. It is directly associated with idle quality. The valve could be carbon fouled, out of range or just non functional. Here's a reset proceedure that's at least worth a try.......

The IAC can be removed and cleaned, care must be taken to only clean the pintle and not contaminate the wiring.

You also might have a carboned up throttle body and blades. If you get it all cleaned and it's all working OK, then you might try opening the throttle blades a little bit so the IAC doesn't have to do all the work. Sometimes it is slow to catch up and get the idle up to where it wants to be.
