Do any cars come STOCK with 255-50-16 tires (which cars), or is that just an oddball size that people change too?

There were two different tires on the 4th Gen V8's... the "base" tire was a 235/55-16. If you paid for the "Z-rated" tire option (RPO QLC) you got the 245/50-16 GS-C's.

I am not aware of any stock 4th Gen that left the factory with 255/50-16 tires. Its just a popular replacement. It will match the speedo calibration of the 235/55-16's best. It's slightly larger in diameter than the 245/50-16, so it would cause a slight error if you replace the 245's with the 255's.

Since you are asking for any car the only one I can think of is the mid 80s Corvette. I'm not sure of what years.
