Is there a way to check the timing chain to see if it is excessively worn? Based on the smell of the exhaust, it seems to run extremely rich, which may point to the ECT sensor.

With 160K miles, if it's never been changed, the chain is most likely stretched and the gears are probably worn out. Mine was giving me signs after only 100K - and my car is mostly stock.
There's no way to check it without popping the timing cover off - and if you go through all that trouble, you should just go ahead and do it.
On mine, the gears had the shape of the links on the chain worn into the gear teeth. It was definitely due . . . .

OK, finally had the car scanned. The ECT sensor was causing it do die, I believe. There was a short in one of the wires connecting to it. It now reads properly according to the scan tool. The car doesn't stall anymore, but still accelerates rough when warm. It has a noise in the exhaust while idling that sounds like a very muffled backfire that is not regularly timed. It misses while accelerating, especially bad when the RPM is low. The plugs, wires, coil, ICM, optispark, fuel regualtor, and fuel filter are all brand new. Anymore ideas???

Is the timing chain a common culprit for such a problem? Will it actually wear enough to cause all this? That's about the only thing I haven't replaced or checked. I did notice on the scan tool while driving that the ignition was retarded by as much as 43 degress at one point...is this normal?
