I would like to get the software and cable for my laptop. What is the best product for our OBDII f-bodies? What is the versatility of these in terms of using them on other OBDI or OBDII cars?

Here's a link to a page I've been putting together on 4th Gen hardware and software scanners. You will find that on the software, it is either OBD-I OR OBD-II. I don't know of any that crosses over.

On my '96 Z, I'm using EFILiveV5pro. Yes, I know, it's only "supposed" to work on LS1 cars...The bidirectional controls don't work on the LT1, but no complaints from me missing that little feature.
Now for my '03 Silverado SS with the LQ9 6.0 engine, loosely based on the LS1/LS6 package, using the bidirectional controls to change the IAC, shut-off injectors, change a fuel or timing map, etc. are pretty fun to play with.

A sample file is included, but here's some "real" ones...place them in your C:\Program Files\Starr Performance\EFILive V5 OBD-II\EFI directory and then open them in EFILIve.

Here's a 0-60 run recorded from '03 Silverado SS with a Magnacharger RADIX supercharger. 0-60 Blown SIlverado SS <-- note the fun little "torque" parameters - from the data logger you can calculate 0-60 times, plot a torque curve and calculate horsepower. The accuracy compared to a dyno is debatable, but if nothing else, gives you a baseline to check against when doing mods.
