All your doing is changing the gaskets and that has no effect on the o2 sensors.

Yes, it does. The leaks cause inaccurate readings at the O2 sensors.

As far as difficulty, its not too bad. If you get a set of gaskets with the "hooks" on the ends instead of the closed holes, its a lot easier. With the "hooks", you only need to remove the inside 4 bolts and loosen the outer 2 bolts on each manifold, the swap the gaskets and button them up. Make sure you get a good set of gaskets. Some of the guys here prefer the copper gaskets, other the aluminum ones (Percy's for example). Either one will work great. Hope this helps.

If you're going to do headers soon, then just wait and do them then.

how much hp and tq or overall performance can be affected by leaking exhaust manifold gaskets?

Well, depends on the leak. The minor leak that I used to get at the Y-pipe on my Z was a little noticeable. Obviously I can't give you exact numbers, but you'll feel the difference...esp. after you get the headers on lol
