Difficult to say, but likely not much. A simple gasket match and three angle valve job is only increasing the flow slightly in a certain area around the intake manifold to head union and valves, not the whole intake or exhaust port. Maybe 5-10 HP tops. There is more power to be unlocked by porting the exhaust runner, blending the bowls and cleaning up the intake port. Once those are done, the valve job and port matching add the finishing touch. By themselves there won't be much of a difference.

what do you think about polishing the combustion chambers. will that help any?

The combustion chambers don't neccesarily need to be polished, but just make sure they are smoothed out very well. This will promote flame travel and help to eliminate any potential "hotspots" which can cause detonation.

As was mentioned it helps reduce detonation. Certain heads could benefit from unshrouding the spark plug slightly, but on an LT1 it's fine the way it is. Extreme care is needed when doing the combustion chamber, you don't want to start changing the chamber volume by removing too much material.
If you are looking at squeezing out every miniscule amout of power, indexing the spark plugs helps as well.

I thought LT-1's had a decent selection of aftermarket heads? Wouldn't it be better to do that then to essentially waste money on a port job? I've never gotten why, unless done themselves, people port their 302 mustang heads. It's hundreds of dollars and you can find a good used set of aluminums for $500 if you take the time to look.
