Your coolant never even got above 88 deg F. These numbers honestly don't mean squat. You need to let the engine fully warm up, then do a movie capture while your driving it. And a few WOT passes would be a good idea to look at the trasition from part throttle to PE mode and what is going on in PE mode.
Your o2 sensors "appear" to switching within the normal voltage range, but there is no way of being able to tell for sure until they reach at least 600 deg F. It is also difficult to see the "big picture" with movie capture like this one. 02 sensors switch very quickly(over a 1000 times per second), so it is hard to capture the switching "big picture". To more accurately do this, you might consider using a scanner that has a graphing ability and the ability to show you crosscounts.
