I went from 2.73 to 3.73...and was substantial!!! It really woke up a monster inside...from 3.23 to 3.73, you're not gonna get that affect. I'd run 4.10s, but you'll lose lot more top end but the difference would be more dramatic off the line.
Be prepared for more wear and tear per mile due to higher RPMs. You'll get more noise obviously as well.
I lost an average of 2-3 mpg going from 2.73s to 3.73s also.

Many people (myself included) would recommend looking into other areas of improvement if you already have 3.23's, especially if you use the car as a daily driver.
Bolt on power upgrades, tuning, stall, etc. Doing a proper gear change (gears, setup, tuning) is a pretty costly proposition all said and done and that same money can be used in other ways to simply add more usable power or more efficient use of it.
