I wondered what you guys thought would be a good throttle body for a 396? There seem to be quite a few out there. Is the twin 58mm that I have seen the best size I can get?
Is bigger better in this case?

I would honestly think that a 58mm TB would work well for your application.
There are others that are smarter than me also...so I'd wait for their opinions as well.

A 58 would be the biggest you could go, but I don't know if it would be the best. I think a 52 mm would suffice for a 396 unless you were going with forced induction, but I'm no expert. I know even the stock 48 mm is more than up to the task of a well-modified 350.

Just a reference point or two.... my 381ci stroker, turning in excess of 7,000rpm and making 500HP was only using 77% of the flow capacity of the 58mm Holley throttle body. That is confirmed with engine dyno testing. GM puts the same 48mm TB as the LT1 on their RamJet 502ci/502HP crate engine.
EDIT:
Oops, sorry Fred...didn't mean to steal your post.

The 52mm TB will flow enough air to make 500 flywheelHP. We verified that on the engine dyno with my setup. Even though I have the Holley 58mm TB, the air flow reached maximum at 77% blade opening, and opening the blades farther did not increase air flow.
There is also a 54mm TB made by AS&M that can be considered.
There is no downside to using a 58mm TB on a high HP 396.

381ci all-forged stroker - 10.8:1 - CNC LT4 heads/intake - CC solid roller - MoTeC engine management - 8 LS1 coils - 58mm TB - 78# injectors - 300-shot dry nitrous - TH400 - Gear Vendor O/D - Strange 12-bolt - 4.11's - AS&M headers - duals - Corbeau seat - AutoMeter gauges - roll bar - Spohn suspension - QA1 shocks - a few other odds 'n ends. 800HP/800lb-ft at the flywheel, on a 300-shot. 11.5 @ 117MPH straight motor
So would it hurt, lets say a stock car, to put on a 58mm throttle body? i dont think it would but doesnt hurt to ask. And also would there be any power gains there? I dont think there would be any but thought i'd ask that too

From what I've heard, an oversize TB would actually hurt performance on a stock LT1.
So, in turn, there obviously wouln't be any performance gains.

I am guessing than that I should perhaps leave the stock throttle body there unless I can pick up a cheap replacement?
500hp is what I am shooting for.
I'd say that a 52mm TB would work just fine...but using a 58mm TB also would work fine and wouldn't hurt performance. You would only be using 77% of its potential.

Ok. I'll look for a 52mm or a great deal on a 58mm.
I guess I should ask: Does the same ring true for the MAF? Is bigger not better in this case too.
I'm just trying to figure out all of these other things I need to add. I know that the injectors for one need to change and I believe the fuel pump as well, but what do you guys think about the MAF? Do I need a bigger/better one?

Larger injectors and a larger fuel pump are a must in a stroker build. I'm not positive, but proabaly 48 lb./hr. injectors would be good, and I'm not positive on the fuel pump. Once again, wait for Injuneer or someone who has experience on strokers to more thoroughly answer your question...all I can tell you is that you will need them.
As for the MAF, I've heard from many that keeping the stock MAF is the way to go. I have a good idea where to find some information. Gimme a second to find it really quick, and I'll post in a minute or two.
